Betsy is an unrelenting advocate for the nutritional wellbeing of young children and their families. With her education background in Community Nutrition from the University of California at Davis, and a graduate degree in Consumer and Family Studies at San Francisco State University, she understands the extreme importance of good nutrition for growing children. Before joining KCL, she shared her love of delicious, healthy, fresh foods with Head Start families in El Dorado and Marin Counties, and enjoyed a career at Sunset Magazine, as a Food Writer and Editor; and she has also researched and developed new food products, specifically for children, for national food corporations. She is looking forward to sharing her love of foods with students equally excited to learn about delicious foods and nutrition.
