Pancake Planets
Adding masa to these pancakes provides a hearty texture and flavor. Our classes love them.
Ingredients
- ¾ cups all-purpose flour
- ¼ cup masa
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- About 2 tablespoons neutral oil + more for pan
- Fresh blueberries, optional
Directions
- In one mixing bowl, combine flours, masa, baking soda, baking powder, and salt.
- Mix well with a large spoon.
- In another bowl, whisk eggs, buttermilk and 2 tablespoons oil until well blended.
- Stir wet ingredients into dry ingredients, mixing with spoon just until mixed.
- Pour batter into a large measuring cup.
- Coat frying pan with oil, then heat on medium-high.
- Pour about ¼ cup batter into frying pan for each pancake. Cook until bubbles form on the surface then flip.
- Cook until the underside is golden. Continue this method with remaining batter.
- Top with blueberries if desired.
